How do you derive Capacitance from the Poisson equation? I need to understand the steps. Hint: The potential is constant parallel to the plates.

Use the superposition principle. It is obvious to use it? No. Does it work? Yes. Why? Because it is consistent with all the experiments we have thus far completed. Consider the distance of the plates from the electric charge. Where, the product of Q1 and Q2(capacitance), times Coulomb's constant, K, divided by the distance, d, between the two points of charge. There are no tedious derivations, but you will have to calculate the vectorial summations.
