can anyone give me a specie of saccharomyces cerivisiae or any type of fungi that can survive at ethanol concentrations >16%?
There are certainly no species of Saccharmomyces that can survive at 16% ethanol concs. To the best of my knowledge the highest is around 14% for yeast with S. carlsbergensis, and this was one selective bred by humans from other yeasts. Due to the nature of ethanol and the effect it has upon proteins and fatty acids in the cell walls of fungi it is unlikely that there are any other species more substantially resistant than these though it is possiblethey may not be commonly known or even undiscovered by science at the present time. Personally I would doubt this as there are very few occasions in nature where alcohol is above a concentration of 16% so there would not be any need for such a resistance to occur.
