Gompertz functions can be applied to a lot of situations where you imagine a saturation point being reached: adoption of new technology, for example. People may be slow to pick up a new technology but then it becomes more and more popular; at some point, a saturation point is reached where people already use the technology to some sort of equilibrium.

A quick google image search for "iPhone sales graph" comes up with some graphs that can be modeled as real-world Gompertz functions: people want it at first, but they begin to REALLY want it after a while; at some point, everyone who wants one essentially already has one.
