You should also include an apostrophe if you drop any letters from the end of the word, such as in colloquial speech.
Yes that's what i mean't. I just don't understand when it is time to use them during the particular sentence. They are used on some words and not on others.

Well, there are a few exceptions, but you have to be able to recognize when something is plural and when it is possessive. Most of the time, plural possessives will have an apostrophe on the end.
The plural must have an s on the end, and it must be possessive for the apostrophe to be added to the end. Children's toys is an example of a plural possessive where the apostrophe isn't at the end because you wouldn't say, "There are a bunch of childrens over there." There is no s on the end of that plural.
Students is plural because there is more than one. It is possessive because we are talking about their essays. The students' essays.
