make portfolio detailing all the programs you've made? this is closer to an art then a science (at this level) you can get away with showing off the programs you've made over the single course you've taken
Nessman's idea is especially good if you've participated in any open-source projects.
Become familiar with the C/ C++ programming language. Develop some useful software that you can complete in a week, like Conway's game of life, a file parser, hex dump tool, roguelike, or even a compiler/interpreter/game engine/virus/operating system if you are crazy. Choose a reasonable project that you wish to complete in order to not only exercise your programming skills, but also to provide you with something useful.
