Hydrolysis is the phenomenon of breaking (lysis) a molecule by the presence of water (hydro). Carbohydrates are formed by several molecules of monosaccharides which are joined together. In order to break down these carbohydrates, water is needed. The initial hydrolysis of carbodydrates occurs in the early stage of digestion (in the mouth), in which long carbohydrates (starch) are broken down into smaller carbohydrates. This is done by the salivary amylase enzyme (an enzyme which exists in saliva).
The objective of the whole digestive process is basically to break down ingested substances into smaller pieces which can be absorbed by the organism. The same thing occurs with carbohydrates, which must be broken down (by hydrolysis) into smaller pieces which can be absorbed. Monosaccharides are the smallest building blocks of carbohydrates.
