They likely have two completely different number of chromosomes, so when the somatic cells in the gonads attempt to produce gametes, the daughter cells end up with different numbers of chromosomes that don't pair up with other gametes they meet, preventing mitosis from occurring properly.

Production of viable sperm or oocyte is very comlex process involving various genes. In hybrid crosses between species may not have all gene require for it.
