If I don't have an address for the person to which I am addressing a cover letter, what should I write in the heading for their contact info? All I have is a name, email, and their job title.

I don't know. I guess it really all depends on the person reading your cover letter, but I've written cover letters where I have not included an address and have only put name, email, etc. Sometimes you don't even know the name of the person, so you have to be more generic (e.g. "Search Committee Chair"). It's generally best to find out as much info as you can, because it shows that you've done your homework, but if they don't provide you sufficient information to do that, then what can they expect?

You don't really need a mailing address these days. Just be sure to put the name, title, and organization, all spelled correctly: John Smith Director of Central Planning The Illuminati, Inc. That will work fine.
