Weight is due to high water content in cells, perhaps. Though you'd almost expect those epidermal cells to be just mats of dried up keratin linked by tight junctions. Neat! :D

Depending on your definition of "organ", fat is actually the largest "organ" in human bodies. A woman with a BMI over 35 is more than 50% fat by weight. And fat is not a static storage tissue, it's an important source of hormones and a key regulator of blood glucose levels, and energy balance.
