Because of the way they adapted to their environments. Carnivorous plants are usually found in places with really crappy soil, so there wasn't much for them to metabolize with photosynthesis alone. Digesting insects allows them to grow better and produce more seeds, which makes them ultimately more successful in terms of completing their life cycle and in an evolutionary sense.
