Why must light converge through a lens or off a parabolic mirror for us to see it?

It doesn't. You can easily see the light from an object that doesn't even have the shape of a lens. What you may be thinking about is the fact that, if we observe an image from a lens or mirror, it just so happens that every light ray forming the image on the retina of our eyes has passed through the same point on its journey from the original object.
