this goes into details http://hyperphysics.phy-astr.gsu.edu/hbase/thermo/inteng.html#c4 But the idea is heat is a measure of how much the molecules are moving and jiggling around. If the molecules have bonds between them this affects how much energy you have to add to get them to jiggle faster.
