Why is that we need a nth degree polynomial to represent n+1 points? Why can't we have a (n+1)th degree polynomial to represent those n+1 points?

a minimal degree polynomial requires n+1 points to be defined. take the linear poly: y = mx+b, how many points does it take to define a line?

if we have only one point given, how many lines can be ascribed to the same point?
