combustion usually involves an addition of oxygen in a reaction. rephrasing what @chmvijay mentioned, all samples of Carbon in the sample winds up as carbon dioxide, and all Hydrogen in the sample winds up as Water (H_2O) so your reactants would have to be \[C_2H_5OH+O_2 \rightarrow \] This implies that Oxygen is your excess.

he's missing another reactant on the LHS. And just O_2 as a product would break the law of definite proportion and law of conservation of mass
