Italians make arancini (little oranges) or suppli di Telefono from leftover risotto. Think a ball of rice stuffed with some meat sauce or cheese, dipped in egg, rolled in breadcrumbs and deep fried. Much better than onigiri :-)

what is an arancini
arancini (the singular is arancino, arancini is the plural) are deep-fried balls of Italian rice filled with some meat or tomato sauce, or melted cheese. They can be anywhere from the size of a chicken egg to a grapefruit, although I favor the smaller ones (more crispy surface area for a given volume, dontyaknow...) They are usually made from leftover risotto, which uses a special Italian rice variety which makes extra creamy starch when cooked in broth. For much of recorded history, this rice variety was only grown in the Po River delta in what is now northern Italy, and when Thomas Jefferson smuggled some home in his coat pockets, doing so was a crime punishable by death! He didn't get caught, obviously. As good as they are, they are a lot of work to make, and leftover risotto at my house (a pretty rare event to begin with) is usually fried up the next day in flat pancakes called risotto al salto. Even more crispy surface area :-)
