How do I go about multiplying two functions? Specifically, I have the functions f(x)=2x+1 and g(x)=x^2 -7, I need to find (f * g)(x), so I put together (f*g)(x)=(2x+1)(x^2 -7)... can I use the FOIL method to multiply these or is there a special way that functions need to be multiplied?

you have the right idea you can leave it as it is, or you can foil it out... depends on what form they want the final answer to be.
