is an emulsifier made in a three step process from glycerol and fatty acids, respectively. PGPR reduces the viscosity of chocolate and similar coatings and compounds. It works by decreasing the friction between the particles of cacao, sugar, milk, etc. ...

I don't know how much into the subject you are, but honestly I think you should make the use of the citation databases. I've started by finding one review article that contain multiple references, that may be in your area of interest. So the article I attach is not that interesting, but the citations are.
