well, we we say "A or B", this includes the possibility of A and B. Suppose I want to say A or B but not A and B, do I say "Either A or B"?

yes. saying "I am going to take either a blue or a red balloon" means that you will take only the red balloon OR only the blue balloon. NOT BOTH.

"or" is always exclusive. "this or that" so 1 option is - this and not that, and the other option is - that but not this
