how is hydroelectric power produced

Hydroelectricity is the term referring to electricity generated by hydropower; the production of electrical power through the use of the gravitational force of falling or flowing water.

Yep, specifically, water is used to turn a turbine, which rotates copper coils around a very powerful magnet. Because the rotation causes alternating ECM fields, electricity is generated. This is frequently done via gravity when it is performed in dams. Basically, the water backs up and pours into release tubes which are kind of like man-made waterfalls. The falling water hits the turbines and turns them. It can also be done by capturing the motion of waves in the ocean to generate the energy.
