Generally, what happens to the rate of dissolution for a solid solute when you change from stirring a solution to not stirring it?

Well, you are creating disturbance in the system, sort of forcing the molecules to collide with each other. when stirring or shaking the solution it removes the solvent that has already dissolved pieces of the solute and replaces it with fresh solvent.
