Eijkman went to Java to isolate the pathogen causing beriberi, an illness that appeared to be contagious as it was common in prisons and among ship crews. The idea here is to take the observations and get the most conservative possible interpretation - what's the most you can say, given that information? Does this indicate that beriberi is 'most certainly not' due to a pathogen? Personally, I wouldn't go that far; perhaps some component of the red rice acts as a natural anti-pathogenic agent, or perhaps eating red rice helps the host become resistant to the beriberi pathogen. You'd need to do a bit more testing to find out. How about the statement that white rice contains little nutritive value? What evidence do you see for such a broad statement? The middle two statements are interesting, but think about the 'changing diet' one for a moment - you know that in chickens changing from white to red rice is associated with recovery. What you don't know is the diet of the humans who suffer from beriberi. You also still don't know what causes beriberi, and although it's probably true that humans should change their diets, that's not too helpful since you're not sure how they should change them. It seems to me that the third answer is the most useful and the safest conclusion that can be taken from the observations
