Actually carboxylic acids react very well with baking soda, generating effervescence, which is the hydrogen from COOH- in vinegar , displaced by sodium, therefore it is a single displacement reaction.

Vinegar, acetic acid and ethanoic acid are basically the same thing. CH3COOH + NaHCO3 - CH3COONa + H2O + CO2
