It's 30 degrees...but since it's negative do you just write -30 degrees or make the reference angle from the negative quadrants, like 120 degrees?

Either is correct. However, keep in mind that it's negative in relation to pi or 2pi. So you can say -30 degrees, or 150 degrees (5pi/6), or 330 degrees (11pi/6).
