any ideas?

b

yes! :) It should be B. equine cause he says 'The word Houyhnhnm, in their tongue, signifies a HORSE' and equine means 'a horse or other member of the family'. As such, it can't be equestrian, because that means a rider of a horse. And bovine and simian are cattle and apes, respectively.
