it's a chemical reaction between an alcohol group (on the glycerol) and a carboxylic acid (from the fatty acid) called "esterification", creates an ester bond/functional group. It is also a "condensation" reaction because it creates a water molecule.

well there is not breakdown of a fat molecule. you're taking a fatty acid (a fat molecule) and glycerol and making a monoglyceride (another fat molecule)
