If I multiply out \((x+1)(x-3)\) I get: \(x^2+x-3x-3\) or: \(x^2-2x-3\) So \((x+1)\) and \((x-3)\) are factors of \(x^2-2x-3\). That is why factoring can be called un-multiplying.
