I think that the operation of this machine is like below: A volatile liquid placed under the amount quantity of water which has to be frozen, evaporates due to operation of the pump driven by the large central wheel. Such evaporation causes the temperature decreasing of the amount of water which has to be frozen. The same pump driven by the large wheel, pumps such volatile liquid into the coil tube, inside the worm tub at the left side. During such travel, the volatile liquid cools and condenses, nevertheless, inside the worm tub at the left side, the same volatile liquid gains heat, and becomes vapour again. The pump connected to the large central wheel, pumps such vapour so produced, inside the reservoir placed under the water, at the right side of the picture, which has to be frozen, and the cycle repeats.

"Had a question on systems before refrigerators were created" Actually, the machine represented here \(is\) a refrigerator: using an outside source of energy providing work to the system, it take thermal energy from a colder tank and gives it to a warmer one.
