More than one mouse = mice.
Now, what do you think the possessive form could be?

Not quite.
"Mouse" refers to one single mouse.
"Mice" refers to more than one mouse.
Also, the only cases to add "s'" is if the word or name ends with an "s."
For example, "It is James' pencil." "James" is his name, which always ends with an "s."
