Doing .25 x 19.27 will tell you how much the coupon will take off of the price of the meal, so subtracting the answer to that from the actual price will work. I usually look at it this way. Since it's 25%, that means you're paying for 75% (Since 100%-25% = 75%), so I just multiplty .75 by 19.27 to find out how much I would pay

0.25 * 19.27 = 4.8175 = 4.82 4.82 is the discount. Now subtract $4.82 from $19.27 to find the discounted price $14.45 is the discounted cost of the dinner. You are correct.
