The H2SO4 acts as the dehydrating agent so yes and the equation is correctly balanced

Let's see you have C12H22O11+H2SO4(conc)−−>11H2O+12C you see that the number of moles of Sulfuric acid is the same; I believe that this is acting as a catalyst/agent. I think the sulfuric acid is dehydrating agent. this reaction produces steam so I want to say water, would be gaseous.
