The weight percentage can be calculated from the atom masses of the elements in sucrose, given that the sucrose is pure. If that is the case, then the weight percentage of carbon in any amount of sucrose would be the same. The formula for sucrose is C12H22O11, so one molecule of sucrose would contain 12 C atoms, 22 H atoms and 11 O atoms, giving the molecular weight of 342,3 g/mole, whereof carbon is responsible for 12*12,01 g/mole = 144,12 g/mole giving the weight percentage of: 144,12 g/mole / 342,3 g/mole = 0,421 = 42,1 %
