How do you get two? I think there can be only one, where sulfur has single bonds to the 2 chlorines and a double bond to the oxygen.

If sulfur has a single bond with the oxygen, is the octet rule being fulfilled for sulfur & oxygen?

because the single bond would have 6 lone electtrons on the oxygen and the double bond would have 4 lone electrons on the oxygen

Yes because sulfur also has lone pair electrons on it
