Right. They're not actually a cohesive group: protists are indeed unicellular eukaryotes, but that's a description of what they look like and has nothing to do with how they're related to each other and to other organisms. Animals and Fungi are believed to be closely related to several flagellate taxa (as a group, animals, fungi and a whole bunch of protists are known as Opisthokonts), but then there are other protists that are more closely related to plants. And the whole "animal-like"/"plant-like"/etc. thing doesn't tell you much about how they're related either. There are animal-like protists that are far more closely-related to algae than they are to any sort of animal.

Here's a handy tree of life: http://upload.wikimedia.org/wikipedia/commons/2/2c/Eukaryota_tree.svg Metazoan = animals, everything in Archaeplastida is basically a plant (Plantae + a bunch of algae), and Fungi are just Fungi. All other names on that tree are protist taxa.

You might have a different tree in your textbook/online reading material. There are lots of different hypotheses, because nobody knows exactly how all organisms are related, especially once you start looking at the protists... but the tree I linked is a relatively modern one, and at the very least, it shows how incredibly diverse protists are. A lot of people think they're just simple cells, but they're actually really complicated and cool :)
