I'm sure you can find a detailed reaction mechanism online, basically what happens is a hydrolysis reaction with a triglyercerol where the NaOH attacks the ester bond between the glycerol and the fatty acid resulting in 3 ampipathic fatty acid molecules and 1 glycerol molecule
