how do you calculate the specific heat of a substance?

The formula you'd use is:\[Q=mc \Delta T\]\[\text{Q = energy added/removed}\]\[\text{m = mass}\]\[\text{c = specific heat}\]\[\Delta T = \text{change in temperature}\] If you know how much energy was added or removed, the mass and the initial and final temperatures, calculating the specific heat is pretty simple.
