Does electricity affect the pH of a substance? If i were to run electricity through orange juice for say, would the pH level change?

Not necessarily, no. You're thinking perhaps of electricity as some kind of reactive fluid, which it is not. It's just the flow of charge. If you ran electricity through your orange juice, it just means electrons hop in one electrode, go through the liquid, and then out the other. Will they do anything in the middle? Maybe. If the right chemical reactants are present, you might have some oxidation-reduction reactions. Would that result in a net change in H+ concentration, i.e. pH? Again, maybe. Depends on what kind of reaction is possible.
