What types of compounds result in hybridization? I know how to hybridize, I just can't tell which ones do and which don't.

it's the atoms orbitals that hybridize, not the compounds. Also, in reality they don't really hybridize, it's just a scheme we developed to explain the geometry of the molecules by the combination of orbitals. So it's easiest to use VSPER and from there hybridization is easily found. With that being said, everything "hybridizes", at least everything in the organic chemistry. Look into molecular orbital theory if you want to know a superior way to explain the geometry of molecules, which also accounts for para-, diamagnetism, amongst other things.
