First of all when you stir you increase the entropy of the system so by thermodynamics, \[\Delta G = \Delta H - T \Delta S \], the Gibbs Free Energy will become more negative and so the process of dissolution will become more spontaneous. Secondly, due to increased agitation, the solute particles will find free spaces in solvent faster and hence will dissolve faster. Give me a medal!
