Osmosis tries to make two things that are in contact with each other have the same amount of the same particles. So when the egg is placed in the corn syrup the egg will lose some of it's mass because the water in the egg goes into the corn syrup to make the difference between the two of them smaller (the corn syrup has more particles). When the egg gets placed into water after that the egg will gain mass, because now the water will go into the egg (because the egg has more particles)
