Why does the water form an ordered structure around pentane if pentane has no partial positive or negative charges? Quote from lecture 2: "if one puts this [pentane] in a solution of water, this will cause all the water molecules to line up in a certain way, almost quasi-crystal around the aliphatic compound molecule. They'll be ordred in a certain layer around the aliphatic molecule without being able to form any strong hydrogen bonds with them"

I believe the water does not interact with the pentane because the pentane is not polar. As a result, the pentane preferably interacts with other pentane molecules rather than water (pentane insoluble in water). The water molecules surrounding the pentane will be in a lower energy state than the water molecules elsewhere (because of less favorable pentane-water interactions), which results in a "fixed" coat of water molecules around the pentane. I hope that is clear :)
