it's vapour pressure (the pressure exerted by the molecules in the liquid towards the atmospheric pressure as they try to "escape" the liquid phase into the vapour phase) is increased. When the vapour pressure equals the atmospheric pressure of a liquid, we say they evaporate or boil.

The kinetic energy is higher because the particles begin to move much more quickly and the liquid turns from a liquid to a gas.
