We should probably start by inventing an even function then taking the derivative of it. Or do we need a rigorous proof beyond an example or two?

If the function isn't differentiatble you wont be able to take its derivative.

Write out the newton difference quotient definition of a derivative and then use the definition of odd and even functions to manipulate the quotient so that you get the result.
