If hydrogen gas diffuses into water, will the hydrogen ions attach to oxygen in water to form H2O molecules? Therefore making the solution neutral again?

nope, H2 just like that cant react with O2 (present in water) to form H2O, it needs high energy .

So water will be acidic after hydrogen gas difussed into it?

its H2 gas and not H+ ions :)

But won't Hydrogen Gas dissociate after diffusing into water to form H+ ions?

nope it cant dissociate so easily :)

yup like Oxygen gas which is called dissolved oxygen :) now for ur case we can say it dissolved H2 gas :P
