I also have a question, how would we generally predict the products of a reaction? For example, let's say in this reaction: I know Cu won't replace Na, but it will form a precipitate according to Wikipedia (also most likely solubility rules.) So now we have Na and NO3 left, why wouldn't they just form a salt solution? Why does there need to be a third product?

There should be 2 NaI in reactants and 2 NaNO3 in products. CuI2 precipitates.
