and for How do you determine the scale factor of a dilation i got just work backwards: look at the ordered pairs before and after dilation to see which factor are the before ordered pairs being multiplied to

Well, it is a solve for the unknown. If you multiply by some scale factor k, then they have the (x,y) to (kx,ky). That means k can be the unknown to solve for. Say the point (2,7) to (4,14). Well, the (4,14) part id the (kx,ky) part. I know x and y, so I can sustitute: (k2,k7) = (4,14) or k2=4 solve for k.

Well, for any function you have the whole thing that for a given X there is one and only one Y value. Right?

With dilation, you are scaling everything. Both the x and the y change. So it is like you have a new function that you are putting the entire original function into and it changes it all. This is sort of like function composition where you put a function into another function, BUT you are only putting the (x,y) values of the original function into the new dilation function. That still makes dilation a function on its own.
