Why is the spread of infections so slow?

red and white blood cells and those epic T cells all fight off infections

It is your immune systems job to fight off infection. You have red blood cells and white blood cells, you also have your fighter "T" cells. Those all play a very important role in fighting off infection, which is why infections spread slowly throughout the body. This is actually why certain viruses that cling on to the proteins in the blood system are so deadly. These viruses trick the red blood cells into attacking the white blood cells (which are made up of protein) by clinging onto the white blood cell or T cells (fighter cells). The red blood cell goes after the virus but destroys the white blood cells and T cells during the process.
