why doesn't oil dissolve in water

Because oil is a non-polar molecule while water is extremely polar.

Water is a polar molecule (bent shaped) and is polar because it has two lone pairs of electrons. Oil is non-polar and thus will not dissolve in an aqueous solution. Kind of like North doesn't go to North and South doesnt go with south . Molecules must be polar to dissolve in water.
