If you assign oxidation numbers to each chemical, you'll notice that the third one ( NaCl + LiNO3 yields NaNO3 + LiCl) involves no change in oxidation no, and thus no electron transfer (which is the definition of a redox reaction). In general, though, double displacement reactions are NOT redox reactions, because they involve the transfer of ions rather than electrons.
