I don't get it, wouldn't H2O be a part of the equation, since it's about the dissolution of the compound in water?

The (aq) recognizes that the dissolved ions are in water (aqueous), so water does not need to be included in the equation. This is the same for writing the dissociation expression for any soluble salt.
