Addition of acid leads to precipitation of proteins. But the addition of excess acid causes the precipitate to dissolve into it, why?

Acid not in excess will protonate available sites on the proteins and cause them to unfold, decrease it's solubility in water and thus precipitate. Acid in excess will catalyze hydrolysis of amide bonds that join adjacent amino acids together - amino acids are water soluble.
